Be it enacted by the Senate and House of Representatives in General Assembly convened:
That the general statutes be amended to require the Department of Public Health and local health departments to allow acidification of sushi rice as an alternative to refrigeration under specified circumstances.
Statement of Purpose:
To allow acidification of sushi rice as an acceptable means of preservation.
