HOUSE RESOLUTION
2 WHEREAS, The members of the Illinois House of
3Representatives wish to congratulate Harold's Chicken, a
4successful Black-owned business, on the occasion of their 70th
5anniversary; and
6 WHEREAS, Harold's Chicken is one of Chicago's oldest
7Black-owned restaurants; and
8 WHEREAS, Harold's Chicken was founded by entrepreneur
9Harold Pierce when he opened a small restaurant with his wife,
10Hilda, on 39th Street called H&H in 1950; and
11 WHEREAS, Harold's Chicken became one of the few examples
12of a thriving fast food chain that was owned by, and primarily
13served, the Black community; and
14 WHEREAS, Harold's Chicken is known for serving freshly
15fried chicken, a chain-wide policy initiated by Harold Pierce,
16and cooking their fried chicken in a mix of half beef tallow
17and half vegetable oil, which produces a taste similar to the
18traditional home-cooked fried chicken that was invented in the
19American South; and
20 WHEREAS, Harold's Chicken has expanded to 45 locations

1today, with 26 locations in Illinois alone; they have
2additional locations in Arizona, California, Georgia, Indiana,
3and Nevada, with plans to further expand to Charlotte, North
4Carolina, St. Louis, Missouri, Houston, Texas, and Las Vegas,
5Nevada; and
6 WHEREAS, Harold's Chicken is now overseen by CEO Kristen
7Pierce, Harold Pierce's daughter; therefore, be it
8 RESOLVED, BY THE HOUSE OF REPRESENTATIVES OF THE ONE
9HUNDRED SECOND GENERAL ASSEMBLY OF THE STATE OF ILLINOIS, that
10we congratulate Harold's Chicken on their 70th anniversary and
11wish them continued success; and be it further
12 RESOLVED, That a suitable copy of this resolution be
13presented to Harold's Chicken CEO Kristen Pierce as an
14expression of our esteem and respect.
